Chenpi is made from citrus peel, but dried peel is not the same as chenpi. Chenpi requires processing and aging to develop its characteristic flavor.
Difference Between Dried Peel and Chenpi
Dried peel is simply dried citrus peel. Without sufficient aging, it does not have the same flavor profile as chenpi.
Common Citrus Varieties
Varieties commonly used include tea-branch citrus, Ougan, Sihui citrus, Mo citrus, banana citrus, and red citrus.
Processing and Aging
Citrus peel is usually sun-dried or steam-dried and then aged in a ventilated, dry environment. It is generally considered chenpi after at least two years of aging.
