Chenpi naturally darkens with aging, which is normal. However, very heavy blackening or musty odors may indicate storage or processing issues.
Normal Color Change
As aging progresses, the peel becomes darker, often deep brown. It usually still shows color gradation rather than a uniform black.
Possible Causes of Abnormal Darkening
- Poor storage: humid or stuffy conditions can cause mold;
- Insufficient sunning: damp peel can heat up and “burn” internally;
- Processing issues: over-drying or excessive heat can darken the pith.
If you notice visible mold, sharp off-odors, or abnormal coloration, use with caution.
