Chenpi is made from citrus peel, but it is not the same as ordinary peel. The key difference is aging.
Key Differences
- Aging process: peel must be dried and aged for years;
- Flavor changes: aged peel becomes more restrained and smoother;
- Use cases: chenpi is commonly brewed or cooked, while fresh peel is used for short-term flavoring.
In general, at least 2–3 years of aging is needed to call it chenpi.
